Recipe: Zeppole

ZEPPOLE
(Italian Doughnut)

2 eggs
1 c. flour
1 c. Ricotta cheese
pinch of salt
2 tsp. baking powder
1 1/2 tsp. sugar
1/4 tsp. vanilla
vegetable oil for frying

Beat eggs slightly; add remaining ingredients (except
oil); heat gently until combined. Batter will be sticky. Drop
by tablespoons into deep heated oil at 375 degrees, frying a few at a
time. Zeppole will turn over by itself and are golden brown in
color in about 3 to 4 minutes. Drain in brown paper bag and
then roll in confectioners sugar. Serve at once. Makes 35
Zeppoles.
