Recipe: Philly Macaroon Cheesecake (using soft macaroon crumbs for crust)

PHILLY MACAROON CHEESECAKE

2 cups soft coconut macaroon crumbs
2 tablespoons butter melted
4 packages (8 oz each) cream cheese, softened
1 cup sugar
1 teaspoon vanilla
4 eggs
2 cups strawberries, sliced (for serving)

Mix crumbs and butter. Press onto the bottom of a 9-inch springform pan.

Mix cream cheese and vanilla with mixer on medium speed until well blended. Add eggs, mix well until blended. Pour over crust.

Bake at 350 degrees F for 55-60 minutes or until center is almost set. Run knife around rim of pan to loosen cake. Cool before removing rim of pan.

Refrigerate 4 hours or overnight.

To serve, top with strawberries.
