Here are two Recipes from Cooking Light Magazine. I hope one of them is the one you are looking for!

Southwestern Meat Loaf and Baked Potatoes
To prepare the meat loaf in advance, shape the ground beef mixture into a loaf, wrap in plastic wrap, and freeze. Thaw overnight in refrigerator; bake as directed below.

1 pound ground round
1 cup frozen whole-kernel corn
1/2 cup picante sauce
1/3 cup regular oats
1/4 cup minced fresh cilantro
1 tablespoon chili powder
1-1/2 teaspoons ground cumin
1 large egg white
Cooking spray
1/4 cup ketchup
4 medium baking potatoes (about 1-1/2 pounds)
1/2 cup fat-free sour cream
Freeze-dried chives (optional)

Preheat oven to 375&176. Combine first 8 ingredients in a large bowl; stir well. Shape meat mixture into a 9 x 4-inch loaf on a broiler pan coated with cooking spray. Brush ketchup over meat loaf. Arrange potatoes around meat loaf on broiler pan. Bake at 375&176; for 50 minutes. Let meat loaf stand 10 minutes before slicing. Split potatoes in half lengthwise; top with sour cream. Sprinkle with chives, if desired.

Cowboy-Style 'Meat Loaf'
Have it 'home on the range' tonight with a meatless meatloaf of corralled kidney beans, mashed potatoes and lots of peppers, barbecue sauce, and cilantro.

2 teaspoons olive oil
1 cup chopped onion
1/2 cup chopped celery
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1-1/2 teaspoons ground cumin
2 garlic cloves, minced
1 jalapeno pepper, seeded and chopped
1/2 cup barbecue sauce, divided
2 cups mashed cooked peeled baking potato (about 1 pound uncooked potatoes)
1 cup regular oats
1/4 cup minced fresh cilantro
1/4 cup ketchup
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 (16-ounce) can kidney beans, drained and mashed
Cooking spray
3/4 cup (3 ounces) shredded reduced-fat sharp cheddar cheesePreheat oven to 375&176. Heat oil in a large nonstick skillet over medium-high heat. Add onion and next 6 ingredients (onion through jalapeno); saut 3 minutes. Stir in 1/4 cup barbecue sauce, potato, and the next 7 ingredients (potato through beans). Spoon the potato mixture into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 375&176; for 30 minutes. Brush 1/4 cup barbecue sauce over loaf, and sprinkle with cheese. Bake an additional 10 minutes or until done.
