CREAMY TOMATO DRESSING
1/4 cup drained canned diced tomatoes
1/4 cup chopped fresh parsley
1/4 cup cider vinegar
1/4 cup mayonnaise
1 tablespoon chopped fresh basil
1 tablespoon Dijon mustard
1 garlic clove, minced
1 teaspoon sugar
1/2 cup olive oil
salt and pepper (to taste)
Puree all ingredients except oil, salt, and pepper in processor.
With processor running, add oil; blend until smooth.
Transfer to small bowl. Season with salt and pepper
Yield: 1 1/2 cups
