Recipe: Sausage and Pepper Bake for big pete

Main Dishes - Pork, Ham
Sausage and Pepper Bake

Serve with polenta, over pasta, or on Crusty Italian rolls.

2 red bell peppers, thinly sliced
2 green peppers, thinly sliced
2 medium onions, thinly sliced
4 large garlic cloves, chopped
2 tsp. dried oregano
1/4 tsp. dried crushed red pepper
2 Tbl. olive oil
2 lbs. sweet Italian sausages

Preheat oven to 350 degrees F. Combine first 6 ingredients in 13 X 9 X 2-inch glass baking dish. Pour oil over and stir to coat. Season with salt and pepper. Brown sausages in heavy large nonstick skillet over high heat, turning often, about 8 minutes. Arrage on pepper mixture. Bake until sausages are cooked through and peppers are tender, stirring occasionally, about 45 minutes. Serves 6.
