Recipe(tried): Chicken Salad Deluxe (using cream cheese)

CHICKEN SALAD DELUXE

This is a very rich mixture but very delicious.

1 (8 oz) package cream cheese
5 tablespoons butter
2 1/2 cups rotisserie chicken, chopped medium fine
1 medium onion, chopped fine
1/2 red bell pepper, chopped fine
5 large button mushrooms, chopped
1 to 2 tablespoons olive oil

Warm cream cheese and butter in microwave safe bowl. Stir until mixed well.

Warm chopped chicken slightly in microwave.

Cook onions, peppers and mushrooms in skillet in olive oil. Cook until tender.

Mix onion mixture and cream cheese mix together fold in chicken. Refrigerate mixture for 2 hours or more.
