Recipe: Italian Sausages With Peppers for Big Pete

Italian Sausages With Peppers
Serves 4

8 Links Of Quality Italian Sausages (Spicy Or Mild As Desired)
6 Medium Sweet Peppers, Using A Mix Of Colors
1 Hot Red Pepper, Finely Chopped (Optional)
1 Medium Onion, Sliced Thin
2 Cloves Of Garlic, Finely Chopped
2 Tablespoons Olive Oil
Salt & Pepper
1/4 Cup Fresh, Chopped Parsley

In a heavy frying pan, brown the sausages in the olive oil well on all sides. Add the onions, and cook until they begin to take on color. Add the peppers and garlic, and continue cooking until the peppers are tender yet not mushy, and the sausages are cooked through. This should took an additional 20 minutes or so. Remove from the heat, season with salt and pepper as desired, and mix in the fresh parsley. Serve.
