Recipe: Cajun Meatloaf and Cajun Low Fat Turkey Loaf (Bon Appetit)

I found two Cajun Meatloaf recipes from Bon Appetit but they are not from the booklets I think.

CAJUN MEATLOAF

Makes 3 servings

2 tbsp butter
1/2 large onion, chopped
1/2 cup chopped bell pepper
1 tsp salt
3/4 tsp ground cayenne pepper
1/2 tsp thyme
1/2 tsp ground black pepper
1/4 tsp ground cumin
1 lb lean ground beef
1 egg, beaten
1/2 cup bread crumbs
1/2 cup catsup, divided use
1 tsp Worcestershire sauce

Preheat oven to 375 degrees F.

Melt butter in heavy skillet over medium-low heat. Add onion, bell pepper and spices; cook, stirring frequently, for 10 minutes or until onions and bell peppers begin to soften.

Combine ground beef, egg, bread crumbs, 1/4 cup of the catsup and the Worcestershire sauce. Mix well. Add sauteed onions and bell peppers. Form into a loaf.

Bake for 20 minutes. Spread remaining catsup on top; bake for 40 more minutes.

CAJUN LOWFAT TURKEY MEATLOAF

Makes 4 servings

"A healthful version of meatloaf that doesn't sacrifice taste for a lower fat content. Put leftovers on onion rolls with lettuce and tomato for a great sandwich treat."

1 1/2 pounds ground turkey
1 large onion, chopped
1/2 cup fresh bread crumbs
1/2 cup chopped fresh parsley
3 large garlic cloves, chopped
1 tablespoon plus 2 teaspoons Creole or Cajun seasoning
1 egg white (beaten to blend)
2 teaspoons ground cumin
1 teaspoon dried thyme, crumbled
Creole mustard or other spicy mustard

Preheat oven to 350 degrees F.

Combine first 9 ingredients in large bowl. Season with salt and pepper. Place turkey mixture in 9x5-inch nonstick loaf pan.

Cover and bake 20 minutes. Spread top with mustard. Bake uncovered another 35 minutes. Let stand 10 minutes. Remove from pan and cut into slices.
