Recipe: Quick Spanish Rice (using Minute Rice, 2 recipes, 1 for microwave)

QUICK SPANISH RICE

1 lb. ground beef
Onion salt, to taste
Salt and pepper, to taste
1 small yellow or white onion, coarsely chopped
1/2 green bell pepper, finely chopped
About 1 1/4 cups instant rice (such as Minute Rice)
2 cans (8 oz. each) tomato sauce

In 2-quart saucepan, brown hamburger, seasoning it with onion salt, salt and pepper.

Add onion, bell pepper, and tomato sauce to meat. Simmer for about 10 minutes.

Pour in instant rice; stir well, cover pan and remove from heat. Let steam 5 minutes.

Taste and add additional seasonings if necessary before serving.

SPANISH RICE SUPPER

1 pound lean ground beef
1/2 cup chopped onion
1 (28 ounce) can tomatoes, cut up, reserve liquid
1 cup quick-cooking rice (Minute Rice)
1 to 2 tablespoons chili powder
1 teaspoon salt
1/8 teaspoon freshly ground pepper

Place beef in 3-quart microproof casserole; break up with fork. Stir in onion. Cook on HI (max. power) 7 minutes; drain.

Add tomatoes with their liquid and remaining ingredients; stir. Cover. Cook on HI (max. power) 12 to 14 minutes, or until rice is tender, stirring once during cooking time. Stir and serve.

Makes 4-6 servings
