Recipe: Corn Fritters

CORN FRITTERS
Source: Talk About Good II by Lafayette Jr League, Junior league of Lafayette

1 cup cream style corn
3/4 cup flour, sifted
2 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt
dash of pepper
1 egg, beaten
1 Tablespoon melted butter
oil for frying

Place corn in a bowl.

Sift together flour, baking powder, sugar, salt, and pepper. Stir into corn. Add beaten egg, then melted butter.

Pour an inch or so of oil into skillet and heat to frying temperature.

Drop batter by teaspoonful into oil. Turn to brown. Drain on a paper towel and serve hot.

Yield 10-15 fritters
