Recipe: Orange-Raisin Cake with O'Henry Filling or Frosting and Orange Tube Cake

ORANGE-RAISIN CAKE WITH O'HENRY FILLING OR FROSTING

2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
pinch of salt
1/2 cup butter, room temperature
1 cup sugar
2 egg yolks, beaten (reserve whites)
1 tsp. vanilla
Juice of 1 orange
1 cup raisins and rind of orange, put through food grinder
3/4 cup warm water

Sift flour 3 times with baking soda, cinnamon and salt.

Cream butter and sugar, add egg yolks, vanilla, orange juice and ground raisins and rind.

Add flour alternately with warm water.

Last fold in the 2 egg whites that have been stiffly beaten. Pour into greased 9x13 inch pan or two 8 or 9-inch layer pans.

Bake at 350 degrees until it feels done to the touch. Frost or use the following for filling:

O'HENRY FILLING OR FROSTING:

1/2 cup sugar
1/3 cup sour cream
1 egg
1/2 cup ground raisins
Combine and cook until quite stiff. Scorches easily, so watch it.

Add:
1 teaspoon vanilla
1/2 cup chopped walnuts

Cool and spread between layers or on top of cake. Frost with 7-Minute Frosting.


ORANGE CAKE

1 cup sugar
1/2 cup shortening
2 egg yolks, well beaten (reserve whites)
1 cup buttermilk
1 tsp. soda, dissolved in buttermilk
2 cups flour
1 tsp. vanilla
1 tsp. almond
1 cup raisins, ground together with peel of 1 orange
1 cup chopped nuts (pecans or English walnuts)

Cream together sugar and shortening. Add other ingredients in order listed.

Finally fold in 2 eggs whites, beaten stiff. Spread batter in greased and floured tube pan.

Bake at 350 degrees for 1 hour in preheated oven.

GLAZE:
Juice of 1 orange
1 cup sugar

Mix together and heat; but don't boil. Pour over cake while still warm.
