SCHOOL CAFETERIA SUGAR COOKIES
"This is in response to a request for a recipe for the sugar cookies served at Monroe Elementary in the 1960s. It was given to me by a cafeteria manager of the Oklahoma City schools as the standard recipe for all the school cafeterias until stiffer guidelines were set that cut the amount of fat that could be served to the children."
1 pound butter
1 1/3 cups sugar
2 tablespoons vanilla
5 cups all-purpose flour
In large bowl of electric mixer, cream butter, sugar and vanilla until it is light colored and fluffy. Continue creaming on low speed as you gradually add flour. Mix until thoroughly blended.
Portion cookies with a spoon, placing on baking sheet in staggered rows. Dip bottom of glass or sugar bowl in sugar and press each cookie flat.
Bake in 400 degree F oven for 12-15 minutes.
Makes 50 cookies
