Recipe: Savory Yam Wedges (microwave)

SAVORY YAM WEDGES

2 lb. sweet potatoes (or 2 1/2 cups leftover mashed sweet potatoes)
4 eggs
1/2 cup milk
1 1/2 cups (6 oz.) grated light Swiss cheese
1/2 cup chopped green onion or scallion
1/2 tsp. garlic powder
Salt (optional, to taste)
1/2 to 1 tsp. ground black pepper

Scrub, prick and arrange yams like spokes in a wheel on paper towels in microwave oven. Cover loosely with more paper towels. Microwave on high power 12 to 15 minutes, rearranging after 10 minutes for even cooking, until tender.

Lightly grease a microwave-safe, 9-inch pie plate.

When potatoes are cool enough to handle, peel and mash potato, using fork or potato masher. There should be about 2-1/2 cups.

Beat eggs and milk together in a large bowl, stir in cheese, green onion, garlic powder, salt and pepper. Stir in sweet potato. Spread in prepared pie plate.

Loosely cover with waxed paper. Microwave 10 to 12 minutes on high power - turning after 3, 6 and 8 minutes - until firmly set.

Serve warm or cool.

Makes 8 to 12 servings
