MICROWAVE VEGETABLE QUICHE
1/2 zucchini, sliced
mushrooms, 1 handful sliced
1/2 cup green bell peppers, sliced
1 tbsp butter
1/2 lb chopped spinach, defrosted according to package
FOR THE TOPPING:
2 eggs beaten (or use egg substitute)
1/2 tbsp bread crumbs
1/3 cup skim milk
1/2 tbsp olive oil
salt and pepper to taste
1 cup mozzarella cheese (grated or shredded)
paprika
In 9-inch square casserole dish, combine zucchini, mushrooms, peppers, and butter.
Cover and cook at 100% for 3-5 minutes, stirring once midway. Add drained spinach and set aside.
In another bowl, mix egg, bread crumbs, milk, oil, salt, and pepper. Pour over veggies, cover with mozzarella, and sprinkle with paprika.
Cook at 70% for 8-9 minutes. Let stand 3 minutes.
