Recipe: Lancaster County Lima Beans (using dried beans and potatoes)

LANCASTER COUNTY LIMA BEANS

"This makes a very good dish and the cost is low."

1 lb dried lima beans
4 or 5 potatoes, diced
2 cups milk
2 tbsp butter
Salt and pepper, to taste

Boil the beans until nearly soft.

Add the potatoes and continue cooking until both are soft.

Drain off the water and add the milk and butter. Season to taste with salt and pepper and serve.
