Recipe: Confetti Meat Loaf (crock pot)

CONFETTI MEAT LOAF

1 pound lean ground beef
1/4 pound pork sausage
1 egg, slightly beaten
1/4 cup finely chopped leek
1/3 cup fine dry bread crumbs
2 tablespoons taco sauce
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoons chopped fresh basil
1 medium-large zucchini, shredded
1 medium carrot, shredded

In a large bowl combine beef, sausage, egg, leek, bread crumbs, taco sauce, salt, pepper, basil, zucchini, and carrot. Form into a 5 1/2-inch flattened round loaf. Place loaf on a trivet in a 3 1/2 quart slow cooker.

Cover crock pot and cook on LOW about 4 hours or until done.

Remove loaf and cut into 6 wedges; spoon cooking juices over each serving.

Makes 6 servings
