VEGETABLE SOUP MEATLOAF
1 1/2 to 2 pounds ground beef, lean
1 (10 1/2 oz) can condensed vegetable soup
1 egg, beaten
1/2 cup fine bread crumbs or 2 or 3 slices of bread, shredded
1/2 cup chopped onion
1/4 to 1/2 cup chopped green bell pepper, optional
1 tablespoon prepared mustard, optional
1 teaspoon salt, or to taste
1/4 teaspoon black pepper
Mix all ingredients together gently; shape into a loaf. Place in a shallow baking dish.
Bake for 1 to 1 1/2 hours, or until done.
Serves 6 to 8
