Recipe: Rocky Road Pizza (4 recipes)

Jim, here are 4 different receipes for Rocky Road Pizza. Yummm.

Rocky Road Cookie Pizza
Soft chewy sugary bottom layer of cookie covered with a nutty, chocolaty, marshmallow layers.

1 (18-ounce) package NESTL TOLL HOUSE Chocolate Chip Cookie Dough
1/2 cup chopped peanuts
1 cup miniature marshmallows
1 cup (6 ounces) NESTL TOLL HOUSE Semi-Sweet Chocolate Morsels
1/3 cup prepared caramel sauce

Preheat oven to 350 F (175 C)

Arrange cookie dough on a 12-inch pizza pan; roll seams together. Bake 15 to 20 minutes or until light golden brown.

Remove from oven; sprinkle with peanuts, marshmallows and chocolate chips.

Drizzle with caramel sauce. Bake an additional 5 to 10 minutes or until the toppings are melted.

Cool before cutting into wedges.
Makes 12 servings.

ROCKY ROAD DESSERT PIZZA

Makes 1 pizza
Prep.Time: 10 minutes + 15 minutes baking
one 6- to 8-inch flat bread or pita
3/4 cup miniature marshmallows
1/4 cup chopped nuts
1/3 cup Reese's Pieces candy-coated candies
1/3 cup chocolate chips

Preheat oven to 375 degrees. Place flat bread aor pita on a baking sheet. Top evenly with marshmallows. Sprinkle with chopped nuts and candies. Top evenly with chocolate chips.
Bake 12-15 minutes or until chocolate and marshmallows are soft and melting. Cut in fourths to serve.

ROCKY ROAD PIZZA

3/4 c Butter or margarine
3/4 c Brown sugar; packed
1 Egg yolk
1 ts Vanilla
1 1/2 c All-purpose flour
1 1/4 c Semisweet chocolate pieces
1 1/2 c Tiny marshmallows
1/2 c Peanuts; chopped
1/2 ts Shortening

Beat the butter or margarine in a large mixing bowl with an electric
mixer on medium to high speed for 30 seconds. Add brown sugar and beat till
combined. Beat in egg yolk and vanilla till combined. Beat in as much of
the flour as you can with the mixer. Stir in any remaining flour with a
wooden spoon. Spread dough in a lightly greased 12-inch pizza pan. Bake in
a 350~F oven about 25 minutes or till golden. Sprinkle hot crust with 1 cup
of the chocolate pieces. Let stand 1 to 2 minutes to soften. Spread
chocolate over crust. Sprinkle with marshmallows and nuts. Bake 3 minutes
more or till marshmallows are puffed. Cool in pan on a wire rack.
Melt the remaining 1/4 cup chocolate pieces and shortening in a small
saucepan over low heat, stirring constantly. Drizzle over cooled pizza.
Cut into wedges. Makes 12 to 16 servings.

ROCKY ROAD PIZZA
1 c. butter
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 tsp. vanilla
1 3/4 c. flour
1 c. peanuts
1 c. tiny marshmallows
1 c. (6 oz. pkg.) semi-sweet chocolate pieces

Preheat oven to 375 degrees. In a large mixer bowl, beat butter until softened with mixer. Add egg and vanilla. Beat well. With mixer, gradually beat in flour. Spread dough on 14-inch pan. Bake until brown, about 12 minutes.
Sprinkle peanuts, marshmallows, and semi-sweet chocolate pieces on top of hot crust. Return in oven and bake 6 to 8 minutes.
