Recipe(tried): Applesauce Spice Cake

Haven't made this in ages, took it to many a potluck in the past.

Applesauce Spice Cake

2 1/2 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 cup margarine
2 cups sugar
2 eggs
16 oz. applesauce
1/3 cup water
1 cup raisins
3/4 teaspoon rum or vanilla extract

Preheat oven to 350. Grease and lightly flour an angel food cake pan. Sift 1st 6 ingredients together and reserve. Combine margarine, sugar, eggs and applesauce in large bowl.Beat at high speed with electric mixer 3 minutes. Turn speed to low and stir in flour mixture alternately with water, beating after each addition until batter is smooth. Stir in raisins and extract just until blended. Pour into prepared pan. Bake at 350 for 1 hour, or until center springs back when lightly pressed. Cool 10 minutes in pan on wire rack. Loosen around edge of pan and tube with knife, turn out onto wire rack and cool completely. Cut into thin slices to serve.
