Recipe: Asparagus-Ham Crustless Quiche

Asparagus-Ham Crustless Quiche
rec.food.cooking/JoyceMcMullin (1996)

1 bunch asparagus, trimmmed, washed, chopped, reserve tips
1/2 cup pre-cooked ham

Pulse in food processor until coarsely chopped. Spread in greased quiche pan.

3 eggs broken into measuring cup plus enough milk to equal 1 1/2 cups
Salt, pepper to taste, dash nutmeg

Stir to mix well. Pour over asparagus/ham mixture in quiche pan.

1 cup Swiss cheese, chopped fine.

Spread over quiche pan. Sprinkle reserved asparagus tips over all.

Bake in a 375 degree F oven for 25-28 minutes.
