Robert West is the Executive chef at 15-o-Five in Modesto. He and his two partners opened the restaurant about 15 months ago. The d cor is trendy but the food is classic American comfort food with things like meatloaf making it onto the menu.

2 Gala apples, sliced
2 Tbsp sugar
1/2 cup Calvados (apple brandy)
2 oz butter
1 Tbsp cream, optional
Ice Cream

Heat a saute pan over high heat. Add the apples and butter. When the apples are a nice golden color, remove them from the pan and add the Calvados to the pan. Reduce by half and add the cream. Pour over your favorite ice cream.
