Recipe(tried): Tasty Pork Chop Dinner and Heavenly Key Lime Pie

I enjoyed a delicious tomato sandwich on white bread with Duke's mayo and a glass of sweet tea for lunch today...it doesn't get any better than that! Those Farmer's Market tomatoes are to die for, can't wait for Saturday!!

Tonight's dinner is pork chops sauteed with chickpeas, escarole and apple served alongside a crisp spinach salad and for dessert a Key Lime Pie which goes perfect with a cup of coffee!

PORK CHOPS WITH SAUTEED CHICKPEAS, ESCAROLE AND APPLE

Serves 4

4 bone-in pork chops (about 9 oz. each)
2 tsp. coarse salt
freshly ground pepper
2 Tbsp. extra-virgin olive oil
1 cup canned unsalted chickpeas, drained and rinsed
1 lb. escarole, leaves torn
1 medium Gala apple, cored and cut into matchsticks
1 tsp. lemon juice
1 Tbsp. lemon zest

Sprinkle pork chops on both sides with 1 1/2 tsp. salt and season with pepper. heat oil in large skillet over med-high heat. Add pork chops, reduce heat to medium and cooked until browned around the edges, about 4 minutes. Flip, and cook 3-4 more minutes. Transfer chops to a plate.

Add chickpeas to pan, and cook 2 minutes. Working in 3 batches, add escarole and cook, stirring, adding additional batches as the leaves wilt.

Sprinkle with remaining 1/2 t. salt and season with pepper. Remove from heat and stir in apple and lemon juice and zest. Serve with chops.

HEAVENLY KEY LIME PIE

Serves 6-8

1 (14 oz.) can sweetened condensed milk
3 egg yolks
2 tsp. Key lime zest (can use regular lime)
1/2 cup Nellie & Joe's Famous Key West Lime Juice
1 (9-inch) graham cracker pie crust
1 cup heavy (whipping) cream
3 Tbsp. powdered sugar
Garnish: fresh lime slices

Preheat oven to 350 degrees F.

Whisk condensed milk and next 3 ingredients until well blended. Pour mixture into pie shell.

Bake for 15 minutes or until pie is set. Cool completely on wire rack about 1 hour. Chill one hour before serving.

Beat whipping cream at high speed, 2-3 minutes until soft peaks form, gradually adding the powdered sugar. Top pie with whipped cream and garnish with lime slices.
