EASY WEEKNIGHT CHICKEN CACCIATORE
1 Tbsp. Bertolli Classico Olive Oil
1 (2 1/2 to 3 lb.) chicken, cut into serving pieces (skin removed if desired) (or 8 bone-in skinless chicken thighs)
1 (10 oz.) package mushrooms, sliced
1 envelope Lipton Recipe Secrets Onion Soup Mix
1 (28 oz.) can crushed tomatoes
1/4 cup dry red wine or water
1/2 tsp. dried basil leaves, crushed
In 6-quart saucepot, heat Olive Oil over medium-high heat and brown chicken. Add mushrooms and cook, stirring occasionally, 2 minutes.
Stir in remaining ingredients. Bring to a boil over high heat.
Reduce heat to low and simmer covered 30 minutes or until chicken is thoroughly cooked. Serve, if desired, over hot cooked noodles or rice.
TO MAKE IN A CROCK POT:
In slow cooker, add mushrooms, then chicken. Combine Lipton Recipe Secrets Onion Soup Mix, tomatoes, wine and basil; pour over chicken. Cook covered on HIGH 4 to 6 hours or LOW 8 hours. Serve as above.
