I could not find a recipe with grits, but perhaps you recall incorrectly? 1970s WW recipes for teabreads and cake at times called for fine bread crumbs, I wonder if the recipe below is what you are thinking of?
BANANA BREAD
4 eggs
4 medium bananas
1 tsp. vanilla
4 slices dry bread
1 tsp. baking soda
1/8 tsp. black walnut extract (optional)
2/3 cup non-fat dry milk powder
Sweetener to equal 6 tbsp. sugar
Beat eggs 10 minutes or until thick. Add bananas and vanilla and beat at low speed for 5 minutes.
Make fine crumbs (from bread). Add sweetener and dry milk. Gently fold crumb mixture into egg mixture.
Bake in non-stick or wax paper lined loaf pan at 350 degrees F for 50 minutes.
This is another similar recipe.

4 slices whole wheat bread, crumbled
2/3 cup nonfat dry milk powder
Artificial sweetener to equal 1 cup sugar
Pinch of cinnamon
Pinch of nutmeg
Pinch of cloves

2 bananas, mashed
1 tsp. banana extract
1 tsp. pecan or black walnut flavoring
1 tsp. imitation butter flavoring
Combine dry ingredients; set aside.
Beat eggs 4 minutes with electric mixer. Add bananas, extracts and butter flavoring. Beat 5 minutes.
Stir egg mixture into dry ingredients and mix well.
Bake at 350 degrees F for 30 minutes. Chill.
