MEXICAN FUDGE

4 c. shredded cheddar cheese
4 eggs, beaten
1 can (4 oz.) chopped green chilies
2 tsp. chopped pimientos, well drained
2 strips bacon, fried and crumbled

Combine all ingredients, mixing well. Spread into an ungreased 8 inch square baking dish (Pyrex works best). Bake at 350 degrees for 30 minutes. Cut into squares when slightly cooled. This is good as an hors d'oeuvres or can be cut into larger squares and served for lunch or brunch. Serves 8.Author: Jeanne

Mexican Fudge

2 cups cheddar cheese
2 cups Monterey jack cheese
1/2 cup salsa verde sauce
3 eggs

Shred and combine cheeses. Put half into a greased 8x8 pan. Pour egg and salsa over cheese. Top with other half of cheese. Bake at 3500 for 30 minutes. Cut into squares and serve warm with nacho chips.
