Recipe: Spinach Chowder (with potatoes and bacon)

2 cups chopped fresh spinach
1 cup water
3 medium potatoes, sliced
3 slices bacon
1/2 cup sliced onion
3 tbsp all-purpose flour
1 cup evaporated milk
2 tsp salt
Add spinach to 1 cup boiling water. Cover; lower heat, and simmer 3-5 minutes. Drain, reserving liquid. Set aside.
Fry bacon in a Dutch oven until crisp; remove bacon and reserve drippings. Drain bacon thoroughly on paper towels; crumble and set aside.
Saute onion in bacon drippings until lightly browned.
Blend flour into onions in pan; gradually add milk, spinach liquid, and potato water. Cook, stirring constantly, until mixture boils and thickens.
Add salt, spinach, and potatoes. Bring to a boil; lower heat and simmer 5 minutes.
Garnish each serving with crumbled bacon.
Makes 6 servings
