Recipe: 4 Recipes for Chicken Wings using Cornmeal
Appetizers and SnacksTACO PARTY WINGS
1/4 cup cornmeal
1 envelope taco seasonings
2 tsp. dried parsley flakes
2 lb. chicken wings drummettes
Combine cornmeal, taco seasoning and parsley into a plastic bag. Rinse chicken wings. Shake wings in bag a few at a time until coated. Place in single layer on greased shallow baking pans.
Bake at 350 degrees F for 25 minutes. Turn wings. Bake another 10 minutes or until tender.
CHILI PARTY WINGS
4 lb. chicken wings
1 envelope McCormick chili seasoning mix
1/4 cup cornmeal
2 tsp. McCormick parsley flakes
3/4 tsp. salt (or to taste)
Combine chili seasoning, cornmeal, parsley flakes and salt in plastic bag. Shake wings in a bag, a few at a time, until coated. Place skin-side up in single layer in well-buttered shallow baking pans.
Bake in 350 degree F oven for 25 minutes, turn wings and bake until tender, about 10 minutes more.
HOT WINGS
1/3 cup yellow cornmeal
1/3 cup unbleached flour
1 tbsp. ground cumin
1 1/2 tsp. salt
1 1/2 tsp. ground cayenne pepper
15 chicken wings (about 2 1/2 lb.)
Preheat oven to 375 degrees F. Brush a 12x17-inch jelly roll pan or a cookie sheet with vegetable oil.
In a medium bowl, combine the cornmeal, flour, cumin, salt and cayenne pepper; set aside.
With a sharp knife separate the wings into segments. Reserve the tip of the wings for another use. A few at a time, turn the wing segments in the cornmeal mix. Shake of the excess coating and arrange the wings without crowding, in the oiled pan.
Set the pan on a rack in the top third of the oven. Bake turning once for about 1 hour until crisp and evenly brown. Drain briefly on paper towels and serve hot.
CRISPY CHICKEN WINGS
1/4 cup olive oil
4 heaping tbsp. flour
2 heaping tbsp. cornmeal
2 tsp. paprika
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. salt
1 tsp. ground black pepper (can use cayenne pepper)
3 to 4 lb. chicken wings
In an electric skillet, heat oil to 350 degrees F.
Combine dry ingredients in a large Ziploc bag, add 12 chicken wings at a time, seal bag and shake.
When all wings are coated carefully, place in hot oil, cook 5-7 minutes on each side, turn and cook 5-7 minutes or until done. Drain and serve.

These recipes don't call for browning the wings before baking them, but if your recipe doesn't turn up maybe you can 'wing it' :-). We'll keep looking.
