STEAMED CRANBERRY PUDDING

2 tablespoons sugar
1/2 cup molasses
1 teaspoon baking soda
1/2 cup hot water
1/2 teaspoon salt
1 cup cranberries, cut in half
1 1/2 cups flour
Warm Butter Sauce (recipe follows)

Using a wooden spoon, combine the sugar and molasses in a medium bowl. Mix the soda in hot water, and pour it into the sugar mixture. Add the salt and cranberries, and stir well. Add the flour and mix.

Butter a 1 pound coffee can. Pour the dough in and put the cover on the can. Place in a deep kettle of hot water. Put the lid on the kettle and steam for 3 hours, keeping the water in the kettle simmering. (Watch so this doesn't simmer dry. Add water to the kettle if necessary, but be careful no water gets into the pudding can.)

Warm Butter Sauce
1/2 cup butter
1/2 cup cream
1 cup sugar
1 teaspoon vanilla extract

In a heavy saucepan, combine the butter, cream and sugar. Boil on medium heat until clear. Stir in the vanilla and serve hot over hot cranberry pudding.

Christmas Steamed Pudding

1 cup beef suet, minced
1 cup melted butter
1/2 pound flour
1/2 pound raisins
1/2 pound currents
5 ounces candied orange and lemon peel
6 ounces brown sugar
5 eggs, beaten
4 ounces fine bread crumbs
1 teaspoon salt
4 ounces minced nuts
1 ounce cinnamon
1 ounce nutmeg
1/2 ounce allspice
1 cup rum

Sift flour and spices together. Mix with suet. Stir in all other ingredients. Grease and flour a square of muslin. Turn out onto the muslin. Place in a pan of simmering water with a plate on the bottom. Simmer slowly for four hours.

Remove pudding and sprinkle with sugar. Pour heated rum over the top and light.

STEAMED CHOCOLATE CHESTNUT PUDDING (Budino di castagne e cioccolata)

serves 6

1 lb. chestnuts, pureed
1/4 cup cocoa
2 cups milk
1/4 cup sugar
2 teaspoons butter
1 egg
1 tablespoon rum, curacao or sherry
1/2 teaspoon,vanilla

Combine cocoa, milk, sugar, and butter and cook slowly over hot water 10 minutes, stirring constantly. Add pureed chestnuts and egg, and stir well. Butter a one quart mold and pour mixture into it. Place in a pan of hot water, and bake in a moderate oven 350deg, until pudding is firm, about 45 minutes. Serve immediately.

This is not a cake but it's a delicious steamed pudding.

LEMON TOPPED CHOCOLATE PUDDING

1 egg
1 lemon
1/2 cup sugar
1 cup flour
1 tsp baking powder
1/2 tsp mixed spice
1/2 tsp salt
1 Tbs cocoa
1/2 cup brown sugar
1 1/2 oz butter
milk to mix

Break the egg into a bowl in which the pudding is to be cooked. Add 1/2 cup sugar and the juice of one lemon. Whisk until thick. In a separate bowl sift dry ingredients and rub in butter. Add well packed brown sugar. Stir in enough milk to make a moist dough. Spoon on top of lemon, egg and sugar mixture. Steam rapidly 1 hour. Serve with whipped cream.

This is an old favourite.

STEAMED ORANGE PUDDING

1 orange
3 oz butter
1/2 cup sugar
2 eggs
1 1/4 cups flour
1 1/4 tsp baking powder
1-2 Tbs milk

Grate the rind from the orange and measure 1 tsp. Remove the rind and pith and carefully remove the segments without membrane. Set the segments aside. Cream the grated rind with the butter till soft and light. Gradually add the sugar and cream well. Beat in the eggs one at a time beating well between the addition of each. Fold in the sifted flour and any juice from the orange. Add sufficient milk to form a soft dropping consistency. Arrange the orange segments in the bottom of a well greased 5 cup basin. Spoon the mixture carefully on top. Cover with greased paper and tie securely. Steam for 2 hours - Serve with cream.
