Recipe: 6 Banana Cookie Recipes without Milk or Eggs

BANANA OATMEAL COOKIES
Makes 30 cookies

3 bananas, mashed
1/3 cup oil
2 cups quick-cooking oatmeal, uncooked
1 1/2 cups chopped dates
1/2 cup chopped walnuts or pecans
1 tsp. vanilla
3/4 tsp. salt

In large bowl combine all the ingredients.

Drop by rounded tablespoons on ungreased cookie sheet.

Bake at 350 degrees F for 20-25 minutes.

BANANA SUNFLOWER SEED COOKIES
Makes 3 dozen

"I got this recipe from my Grandmother. They are really wonderful cookies, moist, chewy, and nutty. She makes them with only 1/2 cup sugar and they taste great!" - Pattye Zensen

2 medium very ripe bananas, mashed
1/2 cup oil
1/2 cup sugar
1 1/2 cups flour
1 cup sunflower seeds
1 tsp baking soda

Preheat oven to 350 degrees F.

In large bowl, beat together bananas, oil and sugar; set aside.

Mix flour with sunflower seeds and baking soda. Add dry ingredients to banana mixture and stir until thoroughly mixed. Drop dough by rounded tablespoonfuls about 2-inches apart onto ungreased cookie sheet.

Bake about 15 minutes, until edges are golden brown.

HAWAIIAN BANANA BARS

1 cup mashed ripe banana
1 cup packed brown sugar
1/4 cup shortening
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chopped nuts
FOR COATING:
1/3 cup confectioners' sugar
1 teaspoon ground cinnamon

Preheat oven to 350 degrees F. Grease and 11x 7-inch baking pan.

In large mixing bowl, combine banana, brown sugar, shortening, lemon juice and vanilla until well blended; set aside.

Sift together the flour, baking powder and salt. Slowly add to the banana mixture; stir until well blended. Stir in chopped nuts. Pour into the prepared pan.

Bake at 350 degrees F for 30 to 35 minutes.

While warm, cut into bars and remove from pan. Combine powdered sugar and cinnamon. Gently roll warm bars in sugar-cinnamon mixture.

SUGARLESS BANANA COOKIES
Makes 24 cookies

3 medium bananas, mashed
1/3 cup oil
1 tsp vanilla
2 cups old-fashioned rolled oats, uncooked
1 1/4 cups chopped nuts
1/4 cup raisins

Preheat oven to 350 degres F.

Combine bananas, oil and vanilla. Stir in oats, nuts and raisins. Drop by tablespoons onto greased cookie sheet. Press down lightly with fork.

Bake at 350 degrees F for 10-12 minutes or until golden brown.

OATMEAL RAISIN BANANA COOKIES

1 banana, mashed
1 cup margarine, softened
1 cup packed brown sugar
1/2 cup sugar
1 tsp vanilla extract
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground cloves
3 cups oatmeal, uncooked
1 cup raisins

Preheat oven to 350 degrees F.

In a large bowl, mash banana, and mix with margarine, sugars, and vanilla until creamy.

In another large bowl, mix flour, baking soda, salt, cinnamon, and cloves. Add dry mixture to wet mixture and mix together completely. Stir in oatmeal and raisins.

Place dollops of cookie mixture onto ungreased cookie tray. You can make them any size, but if you make them too large or small, you may have to adjust the cooking time.

Bake for 15 minutes (for dollops about 2 1/2-inches in diameter), or until slightly golden-brown. Slightly undercooked cookies are chewier, overcooked are slightly brown and will become crunchier after cooling.

VARIATION:
Chopped walnuts and/or chocolate chip cookies are nice additions to this recipe. If you add either or both, reduce the amount of raisins. About 1 1/2 cups total of raisins/nuts/chips/whatever is enough.

GINGER-OAT COOKIES

2 bananas, mashed
1/2 cup molasses
3/4 cup sugar (optional)
2 tsp vanilla
1 cup flour
2 cups oats, uncooked
2 tsp baking soda
1 tsp ground ginger
3 tsp ground cinnamon

Mix together bananas, molasses, sugar and vanilla. Add remaining ingredients. Drop on greased cookie sheets.

Bake at 350 degrees F for 10-15 minutes.
