Recipe: Ground Chicken Gumbo

Ground Chicken Gumbo

1 pound chicken
1 teaspoon salt
1 teaspoon New Orleans gumbo seasoning*
1 medium onion, sliced in rings
2 cups chicken broth, warmed
1 can (28 ounces) crushed tomatoes with basil
1 package (16 ounces) frozen vegetable gumbo mixture
1 rib celery, sliced
1/2 cup chopped cabbage

Heat large Dutch oven over medium high temperature. Add chicken, salt and gumbo seasoning; brown, stirring, about 5 minutes.

Add onion and continue to cook, stirring, about 5 minutes more.

Stir in warm chicken broth and tomatoes; bring to a boil. Add vegetable gumbo mixture, celery and cabbage. Return almost to boiling, reduce heat and simmer over medium low temperature about 20 minutes or until vegetables are tender.

Serve in bowls with croutons.

*Creole seasoning may be substituted if gumbo seasoning is not available.
