Recipe(tried): A VERY moist apple cake!!

This recipe comes from a "Farm Journal" cookbook--it is one of the moistest apple cakes I have ever had. My family has made it for years. It has only a little dough in it--basically enough to "paste" the apples together. Hope this is what you're looking for.

3 Tbsp. butter or margarine
1 c. sugar
1 egg, beaten
1 c. flour
1 tsp. baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp. nutmeg
3 c. diced apples
1/4 chopped nuts
1 tsp. vanilla

Cream butter and sugar; add egg; mix well.
Add dry ingredients to creamed mixture. (The batter is going to be very stiff--you haven't done anything wrong--it moistens up when the apples are added.)
Stir in apples, nuts and vanilla.
Pour into greased 8x8 pan. Bake 350 about 40-45 min. Serve hot or cold.

I think ice cream with your caramel sauce would really make this a very decadent dessert. Actually, if you notice there really is not a lot of fat in this recipe. I sometimes double this recipe and put it in a bigger 11x13 pan.

We love this recipe and have served it to countless people who have also loved it. I hope this is a success for you also.
