Recipe: Creamy Apricot Raisin Rice Pudding (using apricot preserves)

CREAMY APRICOT RAISIN RICE PUDDING

3 cups water
1 teaspoon salt
1 cup medium-grained white rice
2 (12 ounce) cans Pet Evaporated Milk
1/2 cup SMUCKERS Sugar-Free Apricot Preserves
1/2 cup raisins
1/2 cup granulated sugar or 1/4 cup sugar blend sweetener
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

Place water, salt and rice in 3 quart saucepan; bring to a boil. Reduce heat to low; cover. Cook rice for 20-25 minutes, or until rice is tender.

Stir in evaporated milk, apricot preserves, raisins, sugar, vanilla extract and cinnamon; bring to a boil. Reduce heat to a simmer; stir constantly watching closely as mixture begins to thicken to the consistency of heavy cream, about 7-9 minutes.

Serve warm or chilled, garnished with apricot preserves and a sprinkle of cinnamon.
