Recipe(tried): Grandma's German Apple Cake

Grandma's German Apple Cake

(This has always amused us, because our "Grandma", from whom we got the recipe, was Danish!) I am often asked to bring this cake to family events -- and always get requests for the recipe.

4 generous cups peeled and cubed apples (McIntosh, Jonathan -- any good baking apple)

3 beaten eggs
1 t. vanilla
1 c. white sugar
3/4 c. brown sugar, packed
1/2 c. oil
2 c. flour
1 t. salt
2 t. baking soda
1 t. cinnamon
Nuts, if desired

Beat together eggs, vanilla, sugars and oil. In separte bowl stir together flour, salt, soda and cinnamon. Add flour mixture to egg mixture. It will be very thick!
Stir in apples (and nuts, if desired).

Bake in a Bundt pan for 1 hour at 325. (Can also be made in a 13" x 9" -- but it doesn't seem as moist to me.) This cake has a pudding-like texture and can't be beat with vanilla ice cream and carmel sauce.
