Recipe(tried): A Winner! - Thai Chicken Wrap Sandwiches

My husband took vacation time this week so I had to come up with an interesting lunch here and there instead of grilled cheese sandwiches and tuna sandwiches all week. I came up with this one on Wednesday:

Thai Chicken Wrap Sandwiches

SANDWICH MIXTURE
1 whole chicken breast -- coarsely chopped
2 handfuls bok choy greens -- washed
2 large flour tortillas
1 cup cooked rice
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp chili powder
1 cup cooked black beans
SAUCE
1/4 cup peanut butter -- * see note
1/4 cup barbecue sauce
2 tbsp soy sauce
2 tbsp chipotle sauce
For sandwich: Saute bok choy in a nonstick pan for 1 minute until wilted. Set aside. Place all ingredients on 1/2 of tortilla. Tuck in sides as you roll it up. Refrigerate for 1/2 hour. Cut into slices and serve.
For sauce: Blend together in small bowl.

Serving Ideas : sauce, sour cream & salsa
NOTES : * I can't use peanut butter because my son is allergic, so I use either sesame paste or soynut butter. Both work just as well, just give a slightly different taste.
If you don't have bok choy you can use spinach or any other chinese green you have.
