Recipe: Almond Apple Wheat Bread Stuffing and Holiday Stuffing (using raisins, apple, and almonds)

2 cups chopped Granny Smith apples
1 1/2 cups (5 oz.) Blue Diamond natural sliced almonds
3/4 cup chopped onions
3/4 cup chopped celery
4 tbsp. butter or margarine
1 tsp. ground cinnamon
1/2 tsp. poultry seasoning
1/4 tsp. salt
6 cups cubed whole wheat bread
1 cup raisins
1 egg, lightly beaten
1/3 to 1/2 cup apple cider or juice
Saute apples, almonds, onions, and celery in butter for 5 minutes, stirring frequently. Remove from heat. Stir in cinnamon, poultry seasoning and salt.
Toss together bread cubes and raisins; add apple mixture.
Stir egg in 1/3 cup apple cider; toss into bread mixture. Add remaining apple cider; toss into bread mixture. Add remaining apple cider if a moister stuffing is desired.
Use to stuff a 15 to 20 lb. turkey, or 2 large roasted chickens.
Spoon any remaining stuffing into a lightly greased 9x5 loaf pan. Bake covered during last 30 to 40 minutes of roasting.
Makes 10 cups
HOLIDAY STUFFING

1/2 cup golden raisins
1 large apple, chopped
1/2 cup chopped almonds, toasted
1 1/2 cup chicken broth
Preheat oven to 325 degrees F.
Saute onion and celery in butter until tender. Add salt, pepper and poultry seasoning.
Combine bread cubes, raisins, chopped apple and almonds in large bowl, mix well. Stir in seasoned butter mixture. Pour in broth, stirring well. Spoon into large 5 quart baking pan.
Bake for 1 hour.
Makes 36 servings
