Recipe: Creole Lace Cookies (using pecans)

CREOLE LACE COOKIES

1 1/2 cups chopped pecans
1 cup sugar
4 tablespoons flour
1/3 teaspoon baking powder
1/8 teaspoon salt
1/2 cup butter, melted
2 teaspoons vanilla
1 egg, beaten

Preheat oven to 325 degrees F.

Mix well the pecans, sugar, flour, baking powder and salt. Add the melted butter, vanilla and egg.

For each cookie, drop a scant teaspoon of batter onto a foil-lined cookie sheet. Place drops about 3 inches apart.

Bake for 8 to 12 minutes. Let cool.

Peel each cookie off the foil. They can be stored in a cookie jar for several days.

Makes about 4 dozen cookies
