Recipe: Almond Cheesecake Squares with Chocolate Crumb Crust (low fat, low sugar)

Rich in flavor and texture yet made with fat free cream cheese!
3 packages (8 ounces each) fat-free cream cheese, softened
5 1/2 teaspoons Equal for Recipes (or 18 packets Equal sweetener)
2 eggs
2 egg whites
2 tablespoons cornstarch
1 cup fat-free sour cream
1/2 teaspoon vanilla
1/4 teaspoon almond extract
Chocolate Crumb Crust (recipe follows)
1/4 cup sliced almonds
Beat cream cheese until smooth in large bowl beat in remaining ingredients, except Chocolate Crumb Crust and almonds, until smooth.
Pour filling into Chocolate Crumb Crust and sprinkle with almonds.
Bake cheesecake at 300 degrees F until set, about 30 minutes. Cool on wire rack refrigerate until chilled, 6 hours or overnight. Cut into squares to serve.

1/4 cup unsweetened Dutch process cocoa powder
2 1/2 teaspoons Equal for Recipes (or 8 packets Equal sweetener)
5 tablespoons margarine, melted
1/2 to 3/4 teaspoon chocolate extract
Mix graham cracker crumbs, cocoa powder, and Equal for Recipes in bottom of 13x9-inch baking pan mix in margarine and chocolate extract. Pat mixture evenly on bottom of pan.
