Recipe: Mincemeat Cheesecake (using marshmallows and Cool Whip)

MINCEMEAT CHEESECAKE

4 cups mini marshmallows
1/3 cup orange juice
2 pkg. (8 oz. each) cream cheese, softened
1 tsp. grated orange rind
1 baked pie crust
1 3/4 cup mincemeat
1 cup thawed Cool Whip

In double boiler, melt marshmallows and orange juice until creamy. (Do not overcook.) Chill until thickened.

Beat soft cream cheese and orange rind together until fluffy. Mix marshmallow mixture with cream cheese, then fold in Cool Whip.

Spread mincemeat in prepared crust. Cover with marshmallow mixture and refrigerate overnight.
