Recipe(tried): Amish Potato Cakes

Hi Carrie, I think my Mom use to just add a little milk so they would stick together. Make the potato cakes. Dip them in flour and fry them in butter until brown. She always made them smaller so they would stick together better.

We live close to an Amish community here in Ohio and here is a recipe from a Amish cookbook.

2 cups leftover mashed potatoes
1 large egg
1 tbsp. Flour
2 tbsp. Cream
1 tbsp. minced onion (if desired)
4 tbsp. oil, butter or margarine Combine mashed potatoes, egg, flour cream and onion and mix well.
Shape 2-3 tbsp. of mixture into flat cakes. Place oil, butter or margarine into a skillet and heat. Fry potato cakes until golden brown on both sides.

Serves 6

I like to serve applesauce on my potato cakes. Some people like ketchup or maple syrup.
