Recipe(tried): POTATO CAKES

Misc.
I love mashed potato cakes- I always make more mashed potatoes than I need so I have leftovers.
Anyway- I beat up an egg, add some salt and pepper and a tbls or so of milk and form into a cake. Then I fry in butter...do not try to turn too soon- the cake will fall apart...let go till a brown crust forms and then turn...
yum yum yum!!!!
