Recipe: Antipasto Hero (Betty Crocker, 1994)
SandwichesANTIPASTO HERO
1 loaf Italian focaccia bread (about 10 inches in diameter)*
FOR THE DRESSING:
1/4 cup olive or vegetable oil
2 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon dried oregano leaves
1/4 teaspoon crushed red pepper
FOR THE SANDWICH:
4 or 5 leaves leaf lettuce
1/4 pound sliced provolone cheese
1/4 pound sliced fully smoked ham
1/4 pound sliced salami
2 medium tomatoes, sliced
8 pepperocini (Italian bottled peppers), cut lengthwise in half
Cut focaccia bread horizontally in half.
Mix oil, vinegar, sugar, oregano and red pepper. Drizzle evenly over cut sides of bottom and top halves of bread. Layer lettuce, cheese, ham, salami, tomatoes and peppers on bottom half. Top with top half.
Secure loaf with toothpicks or small skewers. Wrap securely and refrigerate up to 6 hours.
To serve, cut into 6 pieces.
*You can substitute a 9-inch unsliced round loaf of Italian or sourdough bread. Cut the bread horizontally in half, and hollow out the inside of the loaf, leaving a 1-inch wall.
