Recipe: Mocha Dessert (parfaits using pudding, chocolate and instant coffee, 1960's)

MOCHA DESSERT

"Nice ending for a meal. Coffee and chocolate give packaged pudding a special touch."

1 (4-serving-size) package vanilla pudding mix (not instant)
1 teaspoon vanilla
1/2 cup semisweet chocolate pieces
1 teaspoon instant coffee
Flaked coconut (for garnish)

Cook pudding according to label directions; add vanilla. Remove half the pudding from the pan and place in a bowl. To the pudding in the pan, add coffee and chocolate chips; stir to dissolve. Cool both puddings to room temperature.

In sherbets glasses or parfait glasses, alternate layers of the puddings. Trim with coconut. Chill.

Makes 4 servings
