APPLE BROWN BETTY BREAD
(1 1/2 lb loaf)
1 1/4 cups buttermilk
2 tbsp unsweetened applesauce
2 cups whole wheat flour
1 cup bread flour or unbleached white flour
1/3 cup old-fashioned rolled oats
2 tbsp brown sugar
1 tbsp oat bran
1 tbsp crushed wheat cereal or bulgur
1 tsp cinnamon
1 tsp salt
1/4 tsp baking soda
1 pinch freshly ground nutmeg
4 tsp butter
2 tsp active dry yeast
1/3 cup lightly floured raisins
Pour buttermilk and applesauce into bread machine.
In a mixing bowl or large 4-cup measure, combine and stir together flours, oats, brown sugar, bran, wheat cereal, cinnamon, salt, baking soda, and nutmeg. Pour mixture into bread machine.
Place 1 tsp butter into each corner of bread machine container. Make a well in the center of dry ingredients and add yeast into it.
Set machine for 1 1/2 lb loaf.
At signal, add raisins.
