Recipe: Apple Cheese Crisp

Hi Jamie;
This would not make enough for 100 people, but it sounds like what you are looking for. The recipe is from a cookbook titled Heartland, by Marcia Adams
APPLE CHEESE CRISP
Filling:
5 medium apples, preferably Jonathan or Paula Reds
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp. grated lemon rind
1/2 tsp. cardamom
1/2 tsp. cinnamon
2 Tbsp. water or cider
1 Tbsp. fresh lemon juice
Topping:
1 cup all purpose flour
1/2 cup granulated sugar
1 tsp. salt
1 cup shredded sharp wisconsin cheddar cheese
1 stick butter
Preheat oven to 325. Peel, core and slice apples into a buttered 8" square baking dish. In a small bowl, combine the sugars, rind and spices..Sprinkle over the apples and mix with your hands. Sprinkle the water or cider and lemon juice over the apples.
In a medium bowl, combine all the topping ingredients and mix to a crumbly consistency. Pat over the apples. Bake 55-60 mins. or until the mixture is golden brown and bubbles up in the center. Serve warm with cream.
