APPLE CINNAMON CHEESECAKE
2 pkg. (8 oz. each) Philadelphia Cream Cheese, softened
1/2 cup sugar
1 tsp. vanilla
2 eggs
1 ready-to-use graham cracker crumb crust (6 oz. or 9 inch)
Apple Topping (recipe follows)
Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Do not overbeat after adding eggs. Pour cream cheese mixture into crust.
Bake at 350 degrees F for 50 minutes or until center is almost set. Cool.
Refrigerate 3 hours or overnight.
Spoon Apple Topping over chilled cheesecake.

2 medium tart apples, peeled, cored, cut into thin wedges
1 Tbsp. water
2 Tbsp. sugar
1/4 tsp. ground cinnamon
Cook and stir apples in water in medium saucepan 4 minutes or until tender. Stir in 2 tablespoons sugar and cinnamon.
Makes 8 servings
