Misc.I have been a chef for 30 years and for a clear glaze you should use apricot jam that you warm up with water and strain. Then apply with a brush. It would be difficult for you to find professional glaze but you can always ask a pastry shop for some Apricot glaze or strawberry for a very nice shine on your desserts.
