Hi Kristine - This recipe is from my Weight Watchers cookbook but I have not tried it. There's also an Apple Betty at 2 points and Baked Apples (stuffed w/dried apricot halves) with Carmel Sauce at 3 points if you want me to post them (also untried). I can't thank you enough for mentioning dottisweightlosszone.com in one of your posts. I love the site and have since passed it on to many. You probably saw a member (I think) recipe there for Apple Pie Pita. She also has lots of other site links that show recipes with points.
Apple Cobbler
Use the reduced-fat version of buttermilk baking mix if you can find it; you’ll cut fat without sacrificing any goodness in this homey dessert.
Makes 4 servings
4 apples, peeled, cored and sliced
2 tablespoons sugar
1 tablespoon fresh lemon juice
cup buttermilk baking mix
cup low-fat buttermilk
teaspoon ground cardamom
1. Preheat the oven to 350 degrees. Spray a 1-qt baking dish with nonstick cooking spray.
2. In a medium saucepan, combine the apples, 1 tablespoon of the sugar and the lemon juice; bring to a boil. Reduce the heat and simmer, stirring constantly, until the apples are soft, about 5 minutes. Pour into the baking dish.
3. In a small bowl, combine the baking mix, buttermilk, the remaining tablespoon of sugar and the cardamom; stir until smooth. With a spoon, drop the batter over the fruit. Bake until browned 20-25 min. Serve warm.
Per serving: 191 calories, 4 g total fat, 1 g saturated fat, 1 mg cholesterol, 304 mg sodium, 38 g total carbohydrate, 3 g dietary fiber, 4 g protein, 3 mg calcium. POINTS per serving: 4. (I assume that's with regular Bisquick not reduced-fat.)
