WARM APPLE PUDDING
3 large apples, thinly sliced
1 cup sugar, divided use
1/2 teaspoon cinnamon
1 teaspoon butter, melted
1 cup flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup skim milk
1 egg
3 teaspoons shortening
1 teaspoon vanilla
Preheat oven to 375 degrees F. Well-grease an 8-inch baking pan.
Place apple slices in the prepared pan Sprinkle 1/2 cup sugar, cinnamon and melted butter over the apples; set aside.
Combine the flour, remaining 1/2 cup sugar, baking powder, and salt in a bowl. Add skim milk, egg, shortening, and vanilla; beat for 2 minutes. Pour over apples in pan.
Bake for 35 to 40 minutes at 375 degrees F.
