Recipe: Apple Oatmeal Bars

APPLE OATMEAL BARS

2 cups quick cooking oatmeal, uncooked
2 cups sifted flour
1 1/2 cups brown sugar
1/2 cup butter, melted
1 teaspoon vanilla
1/2 teaspoon salt
1/4 cup sugar
4 teaspoons ground cinnamon
8 cups sliced, pared tart apples (I like Gala or Jonathan best)
Ice cream (optional, for serving)

Combine oatmeal, flour, brown sugar, butter, vanilla and salt. Mix until crumbly. Press half of mixture in a greased 13x9-inch baking dish. Top with apples.

Combine sugar and cinnamon and sprinkle over apples. Top with remaining crumb mixture.

Bake at 350 degrees F for 45 minutes or until apples are tender.

Wonderful served with ice cream.
