Recipe(tried): Applesauce Snack Cake

Hi Crissy!

Here is a great snack cake to add to your collection.
This recipe is from "Canadian Living".

Applesauce Snack Cake

3/4 cup all-purpose flour
2/3 cup whole wheat flour
3/4 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ground ginger
pinch each, cloves and salt
1 cup applesauce
1/4 cup packed brown sugar
1/4 cup fancy molasses
1/4 cup vegetable oil
2 eggs
1 cup raisins

Icing:
2/3 cup icing sugar
1 tbsp. apple juice

Stir together flours, baking soda, spices, and salt.
Whisk together applesauce, sugar, molasses, oil, and eggs.
Stir applesauce mixture into dry ingredients and add raisins.

Pour into greased 9-inch sqare pan and bake at 350 degrees
for 20 to 25 minutes. Let cool in pan on rack.

Icing: Whisk together ingredients and drizzle over cooled cake.
